Phew – it’s been quite a week: vacation with my Aunt, Mother’s Day lunch with my Mom, and an awesome feature of My Cup Is Full on The Kitchn! I’m finally back, and ready to share a long-time favorite from family events past that I’ve literally “spiced-up” to entice doubters of cauliflower (namely my husband, who, for the record, loved this version). This is an incredibly easy side dish for big events year-round I call Cheesy Cauliflower. And to make it even more dead-simple, you cook it the whole head of cauliflower intact, in the microwave.

Now, this recipe uses a fair amount of mayo, which I personally love (must be those Ohio family roots), but if you’re looking for a low-fat alternative I would suggest trying greek yogurt, maybe with a little lemon juice added in for extra tang.

To be honest, I’m more of a main-dish girl, and rely heavily on one-dish wonders like my Boursin Steak & Spinach Bake or White Chicken Enchiladas, but there are times when sides are absolutely necessary, like when feeding a massive crowd. Whether it’s a family reunion or a chance to have all your closest friends in one room, you might need to have some variety available to satisfy all the picky palates out there, and this one couldn’t be easier to slide into the line-up.

  • 1 head of cauliflower
  • 1 cup mayonnaise
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon paprika
  • 1 cup shredded cheddar cheese


  1. Prepare the cauliflower by trimming off the leaves, and rinsing off any dirt, also use a small paring knife to remove and discard the innermost portion of the core (without the florets coming off in pieces), to allow it to cook all the way through.
  2. In a small bowl mix together all the remaining ingredients except the cheese.
  3. In a microwave-safe dish, heat the trimmed head of cauliflower in the microwave for approximately 7-10 minutes, until it can be easily pierced with a knife.
  4. Coat the cooked cauliflower with the mayonnaise mixture and then with the shredded cheese.
  5. Cook the cauliflower for another 1-2 minutes, until the cheese is melted.
  6. Remove carefully to a serving dish and slice off pieces with a knife.
