Ok, here’s my other busy weekday meal… I call it the Flake House Salad 🙂

Growing up, my concept of a house salad was tasteless iceberg lettuce drenched in ranch… But thank goodness for my waistline, I have found another way. Juicy tomatoes and silky avocado make this salad of tart baby greens shine with a light white vinaigrette.

The key here is a beautifully ripe avocado. If for some reason you can’t get a good avocado, just skip it altogether and substitute your favorite veggie… My fallback is to slice up some baby carrots I always have in the fridge.

The perfect dose of health, this salad that can either rescue an indulgent dinner or be the base for a light lunch. Even easier than the Pasta Salad with Vinaigrette, you have no excuse to not try it 🙂

Easy House Salad

Yields 4-6

Incredibly easy salad that can serve as a base or complement to your meal. It is easily scaled up or down, just keep the 1 to 3 ratio or white wine vinegar to olive oil, and season with salt and pepper to taste.

  • 1 bag of lettuce (i'm a fan of a spring mix of baby greens)
  • 1 avocado, diced
  • 8 campari tomatoes, sliced into quarters (or 1 pint of cherry tomatoes halved)
  • 3 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon freshly ground sea salt (or to taste)
  • 1 teaspoon freshly ground black pepper (or to taste)


  1. In a large bowl combine your diced avocado, tomato slices, and lettuce and toss to mix.
  2. In a small bowl whisk together your vinaigrette of olive oil, white wine vinegar, salt and pepper. You can use a small whisk, or in pinch a fork will do just fine.
  3. I like to whisk the dressing as I pour it over the salad, to avoid a glob of salt at the very end.
  4. Toss together & enjoy!
